We asked Saturday’s class instructor Carol of Infinite Possibilities TN a few questions on how we all can eat healthy during the holidays!
What do you tell someone who thinks it’s impossible to get through the holidays while eating healthy?
“Healthy eating is a lifestyle choice. It’s about the choices you make every time you eat. It’s about progress, not perfection. Remind yourself about WHY you are eating healthy. What you eat on any one day doesn’t cause your health to change. It’s best to make your plan before you go to a gathering.
Often people watch documentaries like Forks Over Knives, What the Health, Cowspiracy, Eating You Alive, etc. and are inspired to change their diet or lifestyle to improve their health, reduce their environmental impact and/or save animals. The recipes that I will be sharing in Saturday’s class at Stoney Creek Farm are whole food, plant-based without added processed sugar or oil, and will help with all of these issues! It’s a win, win, win solution to all these problems.”
What should people do when friends or family are pressuring them to “just take a break from healthy eating” for the holidays?
“Only you can decide what you will eat. People who try to change what you eat are often actually uncomfortable about what they are eating. It’s their issue, not yours.
You can let them know, ‘You do your thing and I will do mine.’ Or maybe tell them, ‘I’m experimenting with a new way of eating and it’s going well, so I choose to stick with my plan.’ Sometimes they need reassurance, and I tell them that I have plenty to eat and am enjoying the food. Ghandi said it very well: ‘Be the change you want to see in the world.’
Holiday gatherings are about sharing time and delicious food together. Plan ahead and take a delicious dish or two to share with everyone. You don’t have to tell them the food is plant-based and made without processed sugar or oils. Maybe that’s just our little secret. Just put the food on the table and let everyone enjoy it!”
What are you most excited to share with the Stoney Creek Farm class attendees on Saturday?
“It’s so hard to decide! I’ve been testing these recipes with everyone from skeptical college-age nephews to eighty-something fathers-in-law and they have all cleaned their plates! Recipes in the class will include Spicy Nacho Sauce, Mustard Glazed Potatoes & Kale, Holiday Sweet Potato Casserole, and Pumpkin Spice Cheesecake, plus a surprise or two!”
